Phoebe's Cupcakes in East Lakeview

Sometimes stores or restaurants open up and serve incredible food initially, but then over time the quality fades, perhaps due to cost-cutting, the crowds disappear, and suddenly there is an empty storefront.   This happened to the beloved Cupcakes on Briar off of Belmont, which started out making fantastic cupcakes that had the richest frosting and the densest cake dough–probably my favorite even today.   There was a line out the door, and the place had an appealing indie-kitsch charm.    The last few visits, though, were increasingly disappointing, there was a change in ownership, and finally the place folded.  

Phoebe's Cupcakes, on Broadway between Aldine and Buckingham, has actually improved in taste over time.   The frosting has become denser, the fillings are richer, and the selection and presentation have been refined.   Their salt caramel cupcakes are enjoyed by my wife and me, a great Strawberries and Cream has been offered during my last few visits, and there are wonderful seasonal favorites, such as an Irish cream cupcake around St. Patrick's Day.   Bacon chocolate chip cookies are sometimes stocked as well.  One of the pastry chefs gave me a heavy vanilla bean buttercream sauce that was delicious.

Cupcake shops have popped up around town, and other shops also do it well, such as Molly's Cupcakes in Lincoln Park and More in Gold Coast.   Still, though, it's nice to see a place that has an opportunity to stick around the East Lakeview neighborhood for a while.
